The floor will be 2 x 8's and 3/4" plywood and sit about 10" inches off the rock foundation. Should I also use a vapour barrier? This would be accessible to small animals."

Answer: Use the same method as a crawl space under floor application. For extra protection against critters, I suggest insulation netting.
